The recipe for this lemon cake was the creation of the celebrated Claire Ptak, proprietor of the celebrated shop and café, Violet, in London’s East End. It is, without doubt, one of the most delicious sweet things that I have ever eaten consisting of home made shortbread and lemon curd. I have become a total fan and convert to her cakes. Having been away from London for so long I had not heard of her before reading an article in “Jamie Magazine”. Even had she been around 10 years ago, before I moved to France, I would not have seen her shop as the East End was a “no go” area to me. I never got over the Kray brothers – which, come to think of it, would have been a very unwise thing to do.
The most delicious cake I have ever eaten.
