Brioche with apricot jam

The greyness of this morning demands an injection of warmth and colour. Soft yellow brioche combined with summer reminiscent apricot jam will do that for me. A delicious vanilla perfume emanates from the toaster, declaring that this is not a matter of ordinary bread being toasted. I am in the habit of leaving some butter in a covered butter dish so that softened butter will always be available for such mood emergencies. This prevision ensures that the butter melts on contact with the newly suntanned brioche, providing a suitably luxurious surface for the spoonful of fruit filled, translucently gloopy apricot jam. Alternate mouthfuls of good coffee and jam topped brioche have done the job – here comes the sun.

  1. you’re spot on with having readily available soft butter. It creates all the difference to the rock hard just-out-of-the-refigerator spreading experience.
